Classic California Guacamole

This easy guacamole recipe is sure to delight your family and friends.

Fresh Guacamole

Flavorful avocado, tomato, onion and cilantro combine for the perfect appetizer for a Mexican food party!

Equipment

  • Cutting Board
  • Knife
  • Medium Bowl
  • Fork or potato masher

Ingredients
  

  • 4-5 avocados ripe
  • 2 TBSP lime juice fresh
  • 1 roma tomato diced
  • 1/4 cup white onion fine diced
  • 1/4 cup cilantro
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Cut avocados in half, removing the pit
  • Scoop out avocado pulp and place in the bowl
  • Add lemon juice, salt and pepper
  • Gently smash the avocado and mix until combined. The guacamole should be a little chunky, not a smooth puree

Notes

  • It’s best to serve guacamole immediately. 
  • To avoid browning you can add a ¼ inch of water to the surface of the guacamole before storing in the refrigerator, up to 2 days ahead.
  • Fresh lemon juice can be used in place of the lime juice.
  • Mayonnaise and sour cream do not belong in guacamole. You can add them, but it isn’t guacamole anymore!!!

Tips for selecting avocados

This quick and easy guacamole recipe will be a hit when served with some salty tortilla chips. Avocados are the star of this recipe, so be sure to quality avocados that are not over-ripe.

  • I prefer to buy green, unripe avocados and let them ripen at home. Avocados allowed to ripen at the store often have bruising (gray spots inside) from everyone testing the ripeness.
  • Avoid buying avocados without the cap (the little brown stem piece). If the cap has come off the quality will deteriorate quickly.
  • The only thing that will help avocados ripen faster is exposure to ethylene gas. You can do this by putting your avocados in a paper bag with an apple or banana. Close up the bag and leave it at room temperature. It may take 1-3 days for them to ripen. Placing them in the microwave or oven will not ripen them!
